The chef describes himself as having a Spanish soul and a Peruvian heart, which turns out to be a precise summary of what arrives on the plate. This is a Michelin-starred tasting menu restaurant where Castilian ingredients, many grown in the chef's own garden outside town, travel through Peruvian technique and land somewhere coastal, Amazonian, and Andean all at once. His daughters run the kitchen and the room, keeping the whole thing tightly in the family.
