    A contemporary restaurant in Palencia where the chef came up through El Celler de Can Roca and Nerua before coming home to cook the food of his own province. The room is clean and unfussy, which lets the menu do the talking: modern technique rooted in the traditions of Castile, with fixed menus that range from market lunches to one conceived as a tribute to 16th-century cuisine. The Michelin Guide has given it a Bib Gourmand.
