    Floor-to-ceiling illuminated pillars playing curated digital art greet you before you even reach the casino floor, which sets the tone for this sprawling Strip resort. The Cosmopolitan runs a serious collection of restaurants from celebrity chefs, popular bars, boutique shops, and a pool scene that converts to an ice rink come winter. The crowd skews stylish and self-aware, which fits a hotel that opened during a recession and never once acted like it.
