The owners are from Orkney and have leaned into it, giving the whole thing the unhurried feel of a Scottish country house without the draughts. Handmade Vispring beds, roll-top tubs in the suites, and a full restaurant by Scotland's National Chef round out a hotel that operates well above its modest footprint.
