Tucked into the Uco Valley on 1,500 acres of Andean vineyard, this modern resort holds 22 rustic-chic villas with private decks, stone bathrooms, and views of the mountains that make alarm clocks feel rude. Some have plunge pools or rooftop terraces; the two-bedroom comes with an outdoor clay tub facing the peaks. Francis Mallmann's open-flame restaurant is on-site, gauchos lead the horseback rides, and the infinity pool handles the rest.
