  1. A log-burning fire, wood everywhere, and seasonal vegetables arranged like a still life set the mood at this one-Michelin-star creative restaurant in Alsace. The chef, an Officer of France's Order of Agricultural Merit, builds tightly edited tasting menus around local and permaculture produce, the kind where spelt and wild sorrel do the heavy lifting. The natural wine list runs to 1,500 bottles, which is either liberating or paralyzing depending on your temperament.
