Skewers stand upright in a charcoal pot, dripping their own fat onto the coals and smoking themselves as they roast, which is about as old a technique as cooking gets. This is a two Michelin star kaiseki-adjacent restaurant where chef Shinya Matsumoto works with deliberately ancient methods, chasing something closer to a sunken-hearth feeling than anything you'd call modern Japanese. Rustic in spirit, meticulous in execution.
