This two-Michelin-starred kaiseki restaurant in Kita-ku takes its name from a word meaning "unique," a phrase beloved by the legendary aesthete Rosanjin Kitaoji. The kitchen's interest in home-brewed sake and fermentation keeps the cooking rooted in old Japanese tradition, even as the plating leans quietly minimal.
