Tyson Cole's Austin-born Japanese fine dining concept has colonized Old Town Scottsdale, and the food makes it hard to resent the expansion. The menu runs well past sashimi and nigiri into tempura, grilled meats, and crudo, and you can order à la carte, build a tasting menu with your server, or hand over full control with an omakase. The room runs on polished service and the kind of care that makes a chain feel like a local obsession.
