Sea bream over rice, a staple of Uwajima, anchors the menu at this quiet Japanese restaurant on the second floor in Kagurazaka. The chef grew up fishing with his grandfather in Ehime Prefecture, trained at a ryotei, then looped through Chinese and French kitchens before coming back to the food he always meant to cook. Ingredients from Ehime still do most of the talking, and the name itself translates roughly as "original intention."
