The name means cranes dancing in clouds, and the chef has built his Japanese dining room around that image and the Osaka principle of wasting nothing. The signature preparation simmers small sea bream whole in rapeseed oil, a nod to the canola fields that once surrounded a nearby temple, until even the bones are edible.
