Vert Frais is a Japanese noodle and rice bowl spot backed by the chef behind Kanoyama, which means the cooking is more assured than the casual room suggests. The shio ramen runs clean and lightly fatty, and the soufflé pancakes are the kind of tall, jiggly thing people photograph before they eat it in about four minutes.
