A chef came back from Japan with one idea: put the counter at the center and cook in front of everyone, sushi-bar style. The result is a 16-seat tasting menu restaurant with gold tones, geometric ceiling panels, and a single menu that changes with the market. Toledo's old city is right outside; inside, everyone starts at the same time, so don't be late. The Michelin Guide has it on their list.
