    A two-Michelin-star restaurant inside a classic Toledo country house on the banks of the Tagus, where the chef builds modern Spanish tasting menus around La Mancha's game, garden produce, and the layered cultural history of the region. Pickles, escabeches, and marinades run through everything, and the menus read like a personal archive, one of them literally called Forgotten Toledo. Serious cooking in a serious setting.
