A nine-course tasting menu served at 1,052 meters in the Entlebuch Biosphere Reserve, where the chef opens each course with a short story and hands you a role in plating the dish. Stefan Wiesner's cooking pulls from the surrounding meadows and forests with an alchemical, fire-themed bent that is part meal, part personal ceremony. The knives are forged on-site by his son. A Michelin star, and lunch only, so the mountains are fully visible the whole time.
