An old railway bridge over the IJ isn't the obvious spot for a creative tasting-menu restaurant, but the view makes a decent argument for itself. Chef Michael Wolf runs the kitchen like a working studio, testing ideas on diners and refining whatever sticks, so the menu shifts as the experiments evolve. Expect ambitious, international cooking with a fondness for reinvention, a turnip Wellington here, an unexpected surf and turf there. Industrial space, sophisticated food.
