An old sawmill on the Oude Rijn gives this modern restaurant a setting that does a lot of the work before the food arrives, and the terrace over the water does even more. The kitchen keeps pace, turning out carefully composed plates that lean on classic French technique without being precious about it. The cooking is restrained in the way that takes more effort than showiness does, and the room feels like a genuine find rather than a converted anything.
