    A Forno Bravo dome oven running around 700 degrees is the whole argument here. Wy'east is a pizza shop in Washington Heights where the chef came up under Portland's Apizza Scholls and brought long-fermented, natural-ingredient pies to Milwaukee. The char comes in four shades of brown, the sag is minimal, and the cheese-to-topping ratio gets the kind of attention most people reserve for something important.
