This is a serious yakitori counter on the second floor of a Nihombashi building, holding a Michelin star, where game fowl goes on the skewer because of its texture and depth rather than any convention. Salt, a touch of chicken fat or vinegar, and smoke are the whole toolkit. Small chicken-based snacks fill the gaps between skewers, keeping things lively without breaking the spell.
