    A sushi restaurant in Omaha that isn't playing it safe, Yoshitomo builds on traditional Japanese technique and then quietly goes its own direction, folding local instincts into the menu in ways that read as natural rather than gimmicky. The rodeo maki, stuffed with wagyu and finished with tonkatsu sauce, makes the argument on its own. A 2026 James Beard nominee for Best Chef: Midwest.
