Rank 1. Nuema
Ecuadorian Peruvian
Pía Salazar's desserts arrive built from radishes, leeks, and turnips, and somehow nobody sends them back. Nuema is a tasting-menu restaurant in Quito where the two chefs, one of them a Noma alumna, pull from Ecuador's biodiversity to produce avant-garde plates built around endemic ingredients most menus would never think to use. It holds a spot on the World's 50 Best Restaurants list and took the Latin America Chefs' Choice Award in 2025.

Rank 2. Tributo
Peruvian Steakhouse
Volcanic stone walls, a wood-and-charcoal parrilla burning at the center, and dry-aged Vaca Vieja from the Ecuadorian Andes: this is what a Peruvian-inflected steakhouse looks like when the kitchen has an actual point of view. The chef builds everything around fire and local origin, and the charcuterie alone could anchor an argument. Ranked on Latin America's 50 Best and the World's Best Steak Restaurants lists, Tributo earns both without seeming to try.
