    Ecuadorian Peruvian

    Pía Salazar's desserts arrive built from radishes, leeks, and turnips, and somehow nobody sends them back. Nuema is a tasting-menu restaurant in Quito where the two chefs, one of them a Noma alumna, pull from Ecuador's biodiversity to produce avant-garde plates built around endemic ingredients most menus would never think to use. It holds a spot on the World's 50 Best Restaurants list and took the Latin America Chefs' Choice Award in 2025.
