Rank 1. El Mercado
Argentine Barbecue
An open-pit barbecue and a clay oven anchor the dining room at this contemporary asado restaurant inside the Faena Hotel, where the kitchen runs almost entirely on fire and smoke. Aberdeen Angus beef is sourced from dedicated ranches in Pampas and Patagonia, aged up to three weeks, then finished over local wood. The sommelier holds a Latin America's 50 Best award, and the 400-bottle Argentine wine list makes a decent case for why.

Argentine Barbecue
The open flames from the grill behind the counter are the first thing you see walking into this Belgrano parrilla, which shares a wall with its own butcher shop next door. That proximity makes the sourcing conversation pretty short. Asado croquettes and provoleta make good openers, but most tables are really here for the meat, which arrives in portions that assume you brought friends. High ceilings, casual chairs, reliably packed.
