  1. An open-pit barbecue and a clay oven anchor the dining room at this contemporary asado restaurant inside the Faena Hotel, where the kitchen runs almost entirely on fire and smoke. Aberdeen Angus beef is sourced from dedicated ranches in Pampas and Patagonia, aged up to three weeks, then finished over local wood. The sommelier holds a Latin America's 50 Best award, and the 400-bottle Argentine wine list makes a decent case for why.
