  1. The Gillardeau family, whose oysters appear on menus across France, runs this seafront restaurant in Marennes, which gives the oyster course a certain credibility you can't manufacture. It's a roomy, light-filled dining room with a panoramic terrace for sunset and a suspended fireplace for when the Atlantic wind reminds you what month it is. The menu leans into local catch and shellfish, with the chef folding in spiced, farther-flung influences that keep things from feeling too solemn.

  3. A Piedmontese chef cooking seafood and vegetables on a French Atlantic island, with Japanese detours and Italian instincts, is a sentence that should not work as well as it does. Sillage is a relaxed bistro in pale stone walls with a nautical lean, where the menu follows the season hard, meat appearing only during hunting season and fish doing most of the talking. It holds a Michelin Bib Gourmand.

This is fine dining built around whatever the sea gives up that day, turbot and sole treated with precision, mackerel and sardines treated with the same precision, which is a quiet form of argument. The scallop pithiviers, in season, has its devotees.

A tiny bistro at the tip of Île d'Oléron where the fish comes straight from local auctions and the bread is milled from Oléron flour, which is the kind of detail that makes a place feel inevitable rather than curated. The menu is short, changes with the season, and the natural wines tend to be local too. A Michelin Bib Gourmand, and packed every service to prove it. Book ahead or spend dinner watching other people eat.


  6. Pierre Gagnaire's seafood-forward fine dining restaurant sits above the Atlantic with a view that makes it hard to concentrate on the menu, which would be a shame. The kitchen pulls heavily from the local coast, pairing shellfish and seaweed with precise sauces and jus in the kind of elegant, elaborately composed dishes Gagnaire is known for. The wine list runs deep, and the pours come from magnum bottles, because of course they do.
