The kitchen leans into what you'd expect from its origins: very fresh fish, fried squid available to take away, and a "seafood charcuterie" that earns its quotation marks. Weekends fill fast, so book ahead.

Davide Scabin's one-Michelin-star tasting menu restaurant inside the Grand Hotel Sitea is a full theatrical commitment: a single seafood tasting menu that deliberately runs heavy to light, opening with turbot and red wine fish glaze before easing toward vegetable-forward, acidic finishes. Completely straight-faced about the whole thing, which somehow makes it funnier.

    A Michelin-starred seafood restaurant in Lombardy where the owner pulls up a chair at the start of the evening to talk you through what's in before you look at the menu. The cooking is contemporary, the crudo is the thing to order, and a raw crustacean plate lands with the kind of generous plating that makes Champagne feel like the obvious choice. The wine list leans that direction anyway, with plenty available by the glass.



  5. A bistro in the heart of Domodossola where the fish menu splits in two directions: Italian tradition on one side, the chef's native Spain on the other, with paella representing the home team. The room has been updated over the years, and in summer the terrace looks out over the old town center. His wife runs the front of house and knows the wine list well, which is the kind of detail that makes a place feel like someone actually lives there.
