The front-of-house and kitchen move in such easy lockstep that the service feels less like service and more like good company.

    Ten seats at a wooden counter, tucked between the Louvre and Place Vendôme, is all there is to Jin. It's an omakase sushi counter, Michelin-starred, where the fish is aged to a precise moment before the chef decides it's ready, and the menu is whatever the chef decides it is. The crowd, small by design, tends toward people who planned this meal weeks ago. Sake list is serious. Paris sushi rarely gets quieter or more focused.

Inside, ten seats ring a hinoki cypress bar where the chef works through a single menu built on impeccable fish, Mediterranean bluefin, Breton catch, Auvergne trout, cut with the kind of precision that makes the room go quiet. Nine sakes and a short wine list round things out. It holds a Michelin star.


  5. Eight seats, marble counters, and a chef working with the focused silence of someone who considers wasabi a condiment, not a weapon. This tiny omakase sushi bar on the edge of Louvois Square holds a Michelin star, and the room is so small you'll watch every cut up close whether you planned to or not. The fish is handled with real delicacy, flavors staying clean and unburied. Book ahead, dress neatly, and arrive hungry.
