Ten seats at a wooden counter, tucked between the Louvre and Place Vendôme, is all there is to Jin. It's an omakase sushi counter, Michelin-starred, where the fish is aged to a precise moment before the chef decides it's ready, and the menu is whatever the chef decides it is. The crowd, small by design, tends toward people who planned this meal weeks ago. Sake list is serious. Paris sushi rarely gets quieter or more focused.
