Japanese
Grilled eel is the whole point here, served in the traditional Japanese style by the only outpost of the Tokyo institution to exist outside Japan. Rue Saint-Honoré is a strange street for it, but the dining room fills with Japanese expats who know exactly what they're ordering before they sit down. The eel comes glazed, in soup, in a savory flan, and the kitchen makes its own miso and chawanmushi from scratch.
