    The palapa roofs and Balinese-style huts are named for the Mayan sun god of universal consciousness, which tells you everything about the vibe before you've unpacked. This boutique resort on the Tulum coast keeps things deliberately low-impact and open to the breeze, with suites and freestanding cabañas that look straight out to sea. An onsite restaurant serves Mexican-Caribbean cooking, and there's a full vegan café, which remains a novelty even here.
