Tucked under an arcade off a residential doorway in Granada, Albidaya is a small, unpretentious restaurant built around a weekly market menu that leans into the quiet overlap between Andalucian and Moroccan kitchens. The name is Arabic for "the beginning," which suits a personal first venture. The Michelin Guide awarded it a Bib Gourmand. Almost everything on the wine list pours by the glass, which is a generous policy and a rare one.
