    The name means "mayor," and chef Paco Ruano runs this Guadalajara dining room like one, with confident, unhurried Mexican cooking rooted in Jalisco's land and seasons. Tasting menu or à la carte, the kitchen leans on local ingredients and techniques borrowed from stints at Mugaritz and Noma, worn lightly enough that you don't feel lectured. It landed on the World's 50 Best Restaurants list in 2025, which for Guadalajara is a fairly large deal.
