A contemporary restaurant whose name translates as "insight," and whose signature dish, called "bonds," is built entirely from Nara vegetables as a quiet meditation on place and connection. The chef reaches into Japanese hospitality for inspiration too, folding foie gras into monaka wafers the way a ryokan might offer welcome sweets. Tatami-patterned plates complete the thought. Thoughtful without being solemn, and the kind of meal that does tend to linger.
