A family-run Japanese restaurant where the chef's daughters handle service while he works the kitchen, and the menu holds a Michelin star. The philosophy is almost austere: let the ingredients speak, and if you need a manifesto, the chef's own line is that cuisine reveals the person. Boiled vegetables dressed simply in bonito soy sauce are on the table, and somehow that's the argument.
