A former monastery carved into Cappadocia's volcanic rock, Argos is a boutique hotel where the caves are the rooms and the lunar landscape out the window is entirely earnest. Stone pathways wind between terraces and a wine cellar, some rooms have fireplaces, and a few have private pools. The hot-air balloons drifting past at dawn are not staged for your benefit, which is a rare thing to be able to say.
