Dishes arrive under a cloche in a dining room hung with Turkish artefacts, the staff in traditional dress, the whole scene leaning hard into Cappadocia's taste for atmosphere. The kitchen earns the theatrics, though, pulling from its own garden to cook Anatolian recipes that feel genuinely recovered rather than performed. Grilled lamb glazed with sesame and honey, set against aubergine cream and pistachio yoghurt, is the kind of dish that makes the cloche feel less silly.
