    The name means gratitude, and the chef runs this Japanese restaurant in Nara with that feeling built into every session in the kitchen, giving thanks to the mentor who taught him vegetable sculpture, the wife who runs the room, and the parents who made it possible. That soup stock is the quiet engine of the cooking, layered with umami from a long list of ingredients, and the wagyu and vegetable ankake carries all of it.
