The chef traded spreadsheets for Ferrandi, then a stint at the French Ministry of Foreign Affairs, before landing here in the 9th. ASPIC is an intimate creative tasting-menu restaurant with an open kitchen and a vintage room that feels more like someone's well-curated dining room than a destination. The surprise set menu changes with the chef's sourcing: small-boat fish, free-range birds, local citrus and herbs. No choices, no à la carte, no negotiating with the menu.
