A single tasting menu, adapted to your preferences on the night, anchors this three-Michelin-star fine dining room set inside a Renaissance palace in old Cáceres. Chef Toño Pérez grew up here, and Extremadura shows up in almost every course, with Iberian pork in more of its forms than you thought possible. The wine cellar runs to historic vintages that will make a certain kind of guest go very quiet.
