    A snug bistro in central Cáceres named for the corn bread of Galicia and Asturias, which is either a charming quirk or a gentle provocation depending on how Extremaduran you are. The kitchen works the region's flavors with updated technique, and a tasting menu called Algarabía pairs with wines from either the local area or the wider peninsula. A dish of fried suckling pig's ear with white prawn and lime stays on permanently, though the garnish follows the season.
