  1. The name comes from the Arabic for olive juice, which tells you something about how seriously this contemporary Sevillian restaurant takes its roots. Two classically dressed dining rooms, an actual cheese trolley, and a digestif cart so extensive it practically needs its own menu. The à la carte keeps things tight; the tasting menus take their names from Andalusian olive tree varieties. Michelin awarded it a Bib Gourmand.
