The menus print on paper made from recycled corn husks, which tells you everything about where this zero-waste Mexican restaurant's head is at. Inspired by London's Silo, the chef runs a tasting menu (or à la carte) built around chinampa vegetables and freshwater fish, with in-house water purification rounding out the commitment. The cooking is precise enough that the philosophy never feels like the main course.
