    Barley Swine collects rainwater for its garden and plates the results on dishes sourced from Goodwill, which tells you roughly everything about where it sits on the spectrum between earnest and clever. It's a tasting-menu restaurant with a Michelin star, but the room runs genuinely casual, shorts-and-sneakers casual. The kitchen leans on local ingredients filtered through Mexican and Southern traditions, then takes them somewhere unexpected every season.
