  1. Eneko Atxa, the Basque chef with three Michelin stars at his flagship back home, has planted a version of that creative cooking inside a Radisson hotel in central Seville. The format is contemporary Basque, with sharing plates, grilled meats, and two tasting menus, short or long, both with wine pairing if you want it. The smoked Iberian pork is the kind of detail that makes the menu worth reading slowly.
