A former factory in Stavanger, now home to a plant-based tasting menu restaurant where exposed brick and asymmetric designer tables set the tone. The Italian chef pulls from his heritage while folding in Sichuan pepper, ssamjang, and Nordic ferments, making vegetables the entire point rather than a footnote. The result is a menu that goes to some genuinely strange places, in the best sense of the word strange.
