A basement yakitori counter in Ginza where the skewers run from chicken oyster to liver paté, which tells you this is not the casual after-work spot one floor up. The chef has spent long enough at the grill to teach from it, and apprentices work alongside him most nights. Set menus are the move, steering through cuts most places never bother with. It draws the kind of crowd that already knows what chicken oyster is, and asks for it anyway.
