Tucked into Marbella's old quarter, this creative Mediterranean restaurant surprises by leaning Castilian, which is the last thing you'd expect from a spot this far south. The chef, a Valladolid native, weaves in fermented foods, game, and pickles alongside flavors from his home region. The bread is baked in-house daily from organic Candeal flour, following a technique he learned from a master baker back in Peñafiel.
