A 19th-century colonial house on the edge of Santander is an unlikely setting for a Michelin-starred tasting menu restaurant, yet here you are, eating algae and Cantabrian anchovies in what feels like someone's beautifully preserved family home. Chef Sergio Bastard runs two menus built around coastal ingredients, with a snack-and-explanation session in the main house before you sit down, which is either charming or theatrical depending on your mood.
