A 15th-century monastery converted into a 114-room countryside luxury hotel, sitting at the edge of the Ingendael Nature Preserve outside Maastricht. The original farmhouse, convent, and grain lofts are now country-chic guestrooms, which is either charming or a lot to explain at breakfast. A Roman-style pool, sauna, and Turkish bath handle the spa brief. Contemporary French classics go out at Les Salons; Burgemeester Quicx keeps the coffee running. The Michelin Guide awarded it one Key.
