China Mama is a Chinatown Chinese restaurant on South Jones that covers Cantonese, Szechuan, and Dongbei cooking, which makes the menu roughly the length of a short novel. Crispy beef, dry pepper chicken, and mapo tofu share the table with braised pork belly and a taro duck. It's a sit-down, shared-plates affair where ordering for the group turns into a negotiation, and Eater has put it on its Las Vegas lists more than once.
